- 1 1/2 cups packed brown sugar
- 1/2 cup shortening
- 1/2 cup butter
- 1 egg
- 1 teaspoon vanilla
- 1 tablespoon molasses
- 2 cups mincemeat pie filling
- 3 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 1/2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
Method
- Preheat oven to 400 degrees F (220 degrees C).
- Cream together brown sugar, shortening, vanilla and molasses.
- Add in egg and mincemeat and mix well. Sift together flour, salt, baking soda and spices, and stir into mincemeat mixture.
- Chill cookie dough for 30 minutes.
- Drop onto cookie sheet and bake 8 - 12 minutes.
