Ingredients
- 1 lb. ground beef (lean)
- 2 c. chopped onions
- 1 c. chopped green peppers
- 1 c. uncooked rice
- beef broth
- 1 (16 oz.) can tomatoes, drained and reserve liquid
- 1 Tbsp. chili powder
- 1 1/2 tsp. salt
- 1 (16 oz.) can cut green beans, drained
Method
- Cook ground beef, onions and green peppers until meat is brown.
- Stir in rice and cook 2 minutes longer.
- Add broth enough to tomato juice to make 2 cups.
- Stir broth mixture, tomatoes, seasonings and beans into meat.
- Heat to boiling.
- Stir well; cover and bake at 350° for 30 minutes or until rice is tender. Serves 6.
