Ingredients

  • 1 lb. ground beef (lean)
  • 2 c. chopped onions
  • 1 c. chopped green peppers
  • 1 c. uncooked rice
  • beef broth
  • 1 (16 oz.) can tomatoes, drained and reserve liquid
  • 1 Tbsp. chili powder
  • 1 1/2 tsp. salt
  • 1 (16 oz.) can cut green beans, drained

Method

  • Cook ground beef, onions and green peppers until meat is brown.
  • Stir in rice and cook 2 minutes longer.
  • Add broth enough to tomato juice to make 2 cups.
  • Stir broth mixture, tomatoes, seasonings and beans into meat.
  • Heat to boiling.
  • Stir well; cover and bake at 350° for 30 minutes or until rice is tender. Serves 6.
