Ingredients

  • 1 spaghetti squash (2-3/4 lb./1.2 kg), cut lengthwise in half, seeded
  • 1 red pepper, chopped
  • 8 cups tightly packed mixed baby salad greens
  • 1/4 cup Kraft Extra Virgin Olive Oil Tuscan Italian Dressing
  • 1/4 cup Kraft 100% Parmesan Grated Cheese

Method

  • Heat oven to 400 degrees F.
  • Spray cut sides of squash with cooking spray; place, cut sides down, on baking sheet.
  • Bake 30 to 35 min.
  • or until tender.
  • Cool 10 min.
  • Use fork to scrape squash flesh into spaghetti-like strands.
  • Toss salad greens with peppers and squash; drizzle with dressing.
  • Sprinkle with cheese.
