Ingredients
- 1/2 lb. large shrimp
- 1/4 c. finely chopped cilantro
- 1 finely chopped jalapeno (remove seeds for milder dish)
- 2 Tbsp. olive oil
- plain boiled rice
- 1/4 c. finely chopped green onion
- 1/4 c. tomato sauce
Method
- Peel and devein shrimp; cut in half.
- Heat oil in nonstick pan over medium-high heat. Saute onion, cilantro and jalapeno for 5 minutes. Stir in tomato sauce. Add shrimp and stir until shrimp turns pink. Serve over white rice. Serves 2.
