Ingredients
- FOR THE SALAD:
- 2 cups Cooked Italian Farro, Chilled
- 1 can (15 Oz. Size) Low-sodium Black Beans
- 1 whole Mango, Peeled And Diced
- 1 whole Tomato, Diced
- 1/4 cups Cilantro, Chopped
- 1 whole Avocado, diced
- Salt And Pepper, to taste
- FOR THE VINAIGRETTE:
- 1 whole Lime, Zest And Juice
- 1/4 cups Chipotle Olive Oil
- 1 teaspoon Cumin
- Salt To Taste
Method
- Mix together all the salad ingredients. Next whisk together the ingredients for the vinaigrette. Drizzle the vinaigrette over the salad and toss to combine. Serve alongside chicken or fish.
