Ingredients

  • FOR THE SALAD:
  • 2 cups Cooked Italian Farro, Chilled
  • 1 can (15 Oz. Size) Low-sodium Black Beans
  • 1 whole Mango, Peeled And Diced
  • 1 whole Tomato, Diced
  • 1/4 cups Cilantro, Chopped
  • 1 whole Avocado, diced
  • Salt And Pepper, to taste
  • FOR THE VINAIGRETTE:
  • 1 whole Lime, Zest And Juice
  • 1/4 cups Chipotle Olive Oil
  • 1 teaspoon Cumin
  • Salt To Taste

Method

  • Mix together all the salad ingredients. Next whisk together the ingredients for the vinaigrette. Drizzle the vinaigrette over the salad and toss to combine. Serve alongside chicken or fish.
