Ingredients
- 1 1/4 c. graham cracker crumbs
- 1/4 c. sugar
- 1/4 c. melted butter
Method
- For Crumb Crust: Combine cracker crumbs, sugar and butter; mix well.
- Cover bottom and part way up the sides of a 9 inch springform pan with crumb mix, pressing lightly.
- Chill.
- For Filling: Beat cream cheese till fluffy.
- Add in sugar, Large eggs, vanilla and lemon peel; beat till smooth.
- Pour into crumb lined pan.
- Bake in preheated 375 degree oven for 25 min.
- Remove from oven and cold to room temperature.
