Ingredients

  • 2 lb. fresh sole or flounder fillets
  • 1 c. low-fat sour cream
  • 8 Tbsp. grated Parmesan cheese
  • 1 Tbsp. minced fresh onion
  • 1 Tbsp. lemon juice
  • salt or garlic and pepper to taste
  • dash of red cayenne pepper (optional)
  • paprika
  • 3 Tbsp. minced fresh parsley

Method

  • Arrange fish fillets in a single layer in a nonstick baking dish.
  • Combine all remaining ingredients, except paprika and parsley.
  • Spread over fish.
  • Bake in preheated 375° oven for 10 to 15 minutes, just until the fish flakes easily.
  • Sprinkle liberally with paprika and serve.
  • Makes 8 servings.
