- 2 lb. fresh sole or flounder fillets
- 1 c. low-fat sour cream
- 8 Tbsp. grated Parmesan cheese
- 1 Tbsp. minced fresh onion
- 1 Tbsp. lemon juice
- salt or garlic and pepper to taste
- dash of red cayenne pepper (optional)
- paprika
- 3 Tbsp. minced fresh parsley
Method
- Arrange fish fillets in a single layer in a nonstick baking dish.
- Combine all remaining ingredients, except paprika and parsley.
- Spread over fish.
- Bake in preheated 375° oven for 10 to 15 minutes, just until the fish flakes easily.
- Sprinkle liberally with paprika and serve.
- Makes 8 servings.
