Ingredients

  • 1 1/2 pounds smoked turkey breast skinned, cut into 2inch julienne
  • 1 1/2 cups sherry mayonaise
  • 1 x salt and black pepper
  • 3/4 pound jarlsberg cheese julienne
  • 2 cups grapes, seedless seedless, red or grn
  • 1 cup celery chopped
  • 1 tablespoon green peppercorns water, packed, drained

Method

  • Combine turkey, Jarlsberg, grapes and celery in a mixing bowl.
  • Add the Sherry Mayonnaise and toss gently but well.
  • Season to taste with salt and pepper and toss again.
  • Cover and refrigerate until serving time.
  • Arrange the salad in serving portions and sprinkle with green peppercorns to taste.
  • Cooked, lightly smoked ham or chicken may be substituted for turkey.
