Ingredients

  • 8 pita bread rounds
  • 1 1/2 pounds sliced smoked turkey
  • 2 watercress bunches, trimmed
  • 8 plum tomatoes, sliced
  • 1 cup walnuts, chopped
  • Curried Apricot Mayonnaise

Method

  • Preheat oven to 350 F.
  • Place pita bread on baking sheet and heat in oven until just warm, about 5 minutes.
  • Cut rounds in half, forming pockets.
  • Place in napkin lined basket and keep warm.
  • Arrange turkey, watercress and tomatoes on platter.
  • Place walnuts and mayonnaise in bowls.
  • Allow diners to assemble their own sandwiches.
  • For Curried Apricot Mayonnaise:
  • 1 1/2 cups mayonnaise
  • 1/4 cup apricot jam
  • 1/2 tablespoon curry powder
  • Whisk ingredients in medium bowl to blend well.
