Ingredients

  • 1/2 c. sliced carrots
  • 1 medium size zucchini, cut lengthwise into halves and then sliced
  • 1 tbsp. margarine
  • 1 8 oz. can stewed tomatoes with juice
  • 1 2 1/2 oz. jar sliced mushrooms, drained
  • 1 c. water
  • 1/4 tsp. dried basil leaves
  • 1/4 tsp. dried thyme leaves
  • 16 oz. smoked sausage, cut into pieces
  • 1 1/2 c. uncooked instant rice

Method

  • Saute carrots and zucchini in margarine in a 10 inch skillet over medium heat for 3 minutes.
  • Add tomatoes with juice, mushrooms, water, basil, thyme and sausage.
  • Bring to a boil, reduce heat to low, cover and remove from heat let stand for 8 minutes, stir once after 4 minutes.
