Ingredients

  • 8 thick slices ciabatta or other Italian-style bread
  • butter, for spreading
  • 12 thin slices smoked mozzarella cheese 
  • 2 vine-ripened tomatoes, thinly sliced
  • 8 large basil leaves

Method

1. Preheat a barbecue flat plate or grill plate to medium. Spread each slice of bread with butter, then place 4 slices, buttered-side-down, on a clean, flat surface. Layer the cheese, tomato and basil on top, then add the remaining bread slices, placing them buttered-side-up. Tie the sandwiches together with kitchen string.

2. Put the sandwiches on the hotplate, pressing them down firmly with a spatula. Grill for 3 minutes, pressing down firmly during cooking. Turn and cook the sandwiches for another 2 minutes, again pressing down firmly with the spatula, until the bread is golden brown and the filling has heated through.

3. Remove from the heat and cut each sandwich crossways into three ‘fingers’. Arrange on four serving plates and serve hot, sprinkled with sea salt.
