Ingredients
- 2 lb. zucchini (about 3 medium)
- 1 carrot, grated
- 1 onion, grated
- 1 stick margarine
- 1 (8 oz.) bag stuffing
- 1 c. sour cream
- 1 can cream of celery soup
Method
- Butter a large casserole dish.
- Cook squash until tender; drain.
- Melt butter.
- Add half the bag of stuffing.
- Add soup, sour cream, vegetables and squash; put into the casserole.
- Top with remaining stuffing.
- Bake at 350° for 20 to 30 minutes.
