Ingredients

  • 1 whole Onion, Large
  • 2 whole Carrots, Chopped
  • 4 whole Celery Stalks, Chopped
  • 2 pounds Pork Loin Or Sirloin Roast
  • 1 can (7 Oz. Size) Chipotles In Adobo
  • 2 cups Dr Pepper Or Coca Cola
  • 1/4 teaspoons Fresh Ground Pepper
  • 1 Tablespoon Cornstarch
  • 2 Tablespoons Brown Sugar

Method

  • Layer chopped onion, carrots, celery, then chunked raw pork in a slow cooker.
  • Empty chipotle peppers with sauce over it all.
  • Pour the soda over and top with freshly ground pepper.
  • Cover and set slow cooker on low for 4-6 hours.
  • Remove chunks of pork and shred.
  • Add the cornstarch and brown sugar and use an immersion blender or regular blender until it is all smooth (if you dont like as much spiciness, discard a few of the whole chipotle peppers first).
  • Return the sauce to the crockpot and add the shredded pork back in.
  • Cook on low for 2-3 more hours.
  • Serve over steamed cauliflower, or on rolls, etc.
