Ingredients
- 1 whole Onion, Large
- 2 whole Carrots, Chopped
- 4 whole Celery Stalks, Chopped
- 2 pounds Pork Loin Or Sirloin Roast
- 1 can (7 Oz. Size) Chipotles In Adobo
- 2 cups Dr Pepper Or Coca Cola
- 1/4 teaspoons Fresh Ground Pepper
- 1 Tablespoon Cornstarch
- 2 Tablespoons Brown Sugar
Method
- Layer chopped onion, carrots, celery, then chunked raw pork in a slow cooker.
- Empty chipotle peppers with sauce over it all.
- Pour the soda over and top with freshly ground pepper.
- Cover and set slow cooker on low for 4-6 hours.
- Remove chunks of pork and shred.
- Add the cornstarch and brown sugar and use an immersion blender or regular blender until it is all smooth (if you dont like as much spiciness, discard a few of the whole chipotle peppers first).
- Return the sauce to the crockpot and add the shredded pork back in.
- Cook on low for 2-3 more hours.
- Serve over steamed cauliflower, or on rolls, etc.
