Ingredients
- 2 T. oil
- 1-1/2 lbs new potatoes, very thinly sliced (or mix with sweet potatoes or yams)
- Salt and pepper to taste
- Fresh herbs to taste
Method
- Heat oven to 350. In large ovenproof nonstick skillet over medium-high, heat the oil, swirling to coat. Arrange potato slices evenly over bottom of skillet, overlapping and layering them. Cook for 5 min, then invert onto plate. Re-oil skillet if necessary. Slide potatoes back into skillet, sprinkle with salt, pepper and herbs. Cook for 5 min. more, then transfer to oven and cook until tender when pierced with tip of knife, about 20 min.
