Ingredients

  • 1 lb. of radiatori or other sturdy pasta
  • 1/2 cup chopped onion
  • 1/2 chopped red pepper
  • 2-3 cloves chopped garlic
  • 4 oz. cottage cheese
  • 4 oz. grated motzerella cheese
  • 1 15 oz. can diced tomatoes
  • 1 15 oz. can tomato sauce
  • 1 8 oz. boz of frozen chopped spinch
  • 1 tea. Italian seasoning
  • pintch of red pepper flakes
  • salt & peper to taste
  • Parmasan cheese
  • parsley sprigs

Method

  • Cook pasta per package directions. While pasta is cookin, saute onion, pepper and garlic in large skillet. Add tomatoes, sauce and seasonings. Contiue to simmer untill pasta is done. Add spinch to sauce. Stir in pasta. Lightly mix in cottage cheese, Then motzerella. Continue cooking only untill cheese is lightly melted. Garnish with parmasan and parsley sprigs. Serve with tosses salad and garlic bread.
