Ingredients

  • 1 kg sirloin, in one piece
  • 2 tablespoons oil
  • 2 tablespoons whole grain mustard
  • to taste salt
  • to taste pepper, freshly ground

  • 34 cup cream
  • to taste salt, pepper
  • 3 tablespoons brandy

Method

  • Before cooking, using a sharp knife, nick the outer rim of fat in several places to prevent curling.
  • Brush steak with oil and spread with the first measure of mustard.
