- 1/2 c. uncooked long grain white rice
- 1/2 c. uncooked wild rice
- 1/2 c. carrot strips, parboiled
- 1/2 c. frozen peas
- 2 hard-boiled eggs, diced
- 1/2 c. celery, diced
- 2 to 3 green onions (tops and all), sliced
- 1/4 c. fresh parsley, chopped
- 3/4 c. mayonnaise or to taste
- 1 can baby shrimp
- 1/2 tsp. curry
- 1/4 c. Italian dressing
Method
- The night before, cook rice.
- Add curry and Italian dressing. Chill overnight.
- Toss marinated rice with other ingredients just before serving.
- Line bowl with lettuce leaves.
- Add salad and garnish with cherry tomatoes.
- Serves 10 to 12.
