Ingredients

  • 1/2 c. uncooked long grain white rice
  • 1/2 c. uncooked wild rice
  • 1/2 c. carrot strips, parboiled
  • 1/2 c. frozen peas
  • 2 hard-boiled eggs, diced
  • 1/2 c. celery, diced
  • 2 to 3 green onions (tops and all), sliced
  • 1/4 c. fresh parsley, chopped
  • 3/4 c. mayonnaise or to taste
  • 1 can baby shrimp
  • 1/2 tsp. curry
  • 1/4 c. Italian dressing

Method

  • The night before, cook rice.
  • Add curry and Italian dressing. Chill overnight.
  • Toss marinated rice with other ingredients just before serving.
  • Line bowl with lettuce leaves.
  • Add salad and garnish with cherry tomatoes.
  • Serves 10 to 12.
