Ingredients

  • 1/4 c. white rice
  • 1 c. canned shrimp
  • 3/4 teaspoon salt
  • 1 tbsp. lemon juice
  • 1 tbsp. chopped green onion
  • 2 tbsp. creamy French dressing
  • 1 tbsp. minced stuffed olives
  • 1 tbsp. black olives
  • 1/4 c. slivered green pepper
  • 3/4 c. diced raw cauliflower
  • Speck pepper
  • 1/3 c. mayonnaise or possibly salad dressing
  • 1/2 sm. head lettuce, finely shredded

Method

  • Cook rice - cold.
  • Cut shrimp in pcs or possibly buy canned tiny shrimp.
  • Combine next 9 ingredients and rice.
  • It is better if prepared 3 or possibly 4 hrs ahead to marinate.
  • Serve on shredded lettuce.
  • 4 servings
