Ingredients

  • 8 soft tortillas
  • old bay seasoning
  • salt
  • 20 cleaned large shrimp
  • 1 large red bell pepper
  • spicy red pepper hummus
  • 1 ripe avocado
  • crumbled feta cheese
  • chopped cilantro

Method

  • Slice red pepper into strips and fry till slightly soft in a bit of EVOO
  • Season shrimp with salt and old bay and fry shrimp till cooked through
  • cut shrimp into bite size pieces
  • on wax paper, take whole tortilla rounds and spray Pam oil on one side of each, then lay oiled sides down on wax paper. These will be the sides that go face down into frying pan eventually.
  • On non-greased side of EACH, spread a thin layer of hummus. Sprinkle on top of HALF the tortillas some peppers; shrimp; feta and cilantro
  • Top with other half of tortilla
  • Transfer to frying pan and fry for about 2 min until crisp and lightly browned and flip and do same with other side.
  • transfer to dish and cut like pizza into 6 wedges. put slices of avocado on the side of the dish to serve.
