Ingredients

  • 3/4 cups Cilantro
  • 1/4 cups Parsley
  • 2 cloves Garlic, Peeled And Chopped
  • 2 Tablespoons Pine Nuts
  • 1/4 cups Parmesan Cheese
  • 1/2 cups Olive Oil
  • 1/2 cups Flour
  • 1 teaspoon Paprika
  • Salt And Pepper
  • 2 Tablespoons Olive Oil
  • 1 pound Uncooked Shrimp
  • 1/2 cups Mayonnaise
  • 4 whole Kaiser Rolls
  • 1 bunch Bibb Lettuce
  • 1 whole Tomato

Method

  • For the pesto: combine all ingredients in a food processor.
  • Pulse until smooth.
  • For the shrimp: In a bowl combine flour, paprika, salt and pepper.
  • Heat oil in a large skillet.
  • Dredge shrimp in flour and cook in batches in the hot skillet, about 2 minutes per side.
  • Drain.
  • In a separate bowl, combine pesto and 1/2 cup mayo.
  • To assemble, hollow out roll if necessary.
  • Place lettuce and tomato on bottom, top with shrimp and smear top with pesto-mayo mixture.
