Ingredients

  • 3 Tbsp. cooking oil
  • 2 Tbsp. flour
  • 2 c. chopped onion
  • 1/2 c. chopped green peppers
  • 1 c. chopped celery
  • 1 clove garlic
  • Creole seasoning to taste
  • 2 1/2 c. water
  • 2 lb. raw shrimp
  • 1 (15 oz.) can tomato sauce
  • 2 c. raw rice

Method

  • Heating cooking oil, add flour; cook slowly until golden brown, stirring constantly.
  • Add onions, peppers, garlic and celery and cook slowly until transparent, stirring often.
  • Add tomato sauce and Creole seasoning.
  • Let cook until oil rises to top.
  • Add rice, shrimp and 2 1/2 cups water.
  • Cook, covered, over low heat until rice is tender.
  • Add more water if mixture appears too dry. Just before serving, mince parsley and green onion tops and add to mixture.
