- 2cu fresh corn kernels or one 10oz package frozen corn, thawed
- 1pt cherry tomatoes, quartered
- 1lb peeled and deveined large, cooked shrimp
- 1/2cu shelled, roasted pumpkin seeds
- 6 scallions (white and light green parts), thinly sliced
- 1/4cu fresh orange juice
- 2T fresh lime juice
- 2t agave nectar (or honey)
- 1t ground cumin
- 1T olive oil
- 3/4t sea salt
- 1/4t black pepper
Method
- in a large bowl, combine the corn, tomatoes, shrimp, pumpkin seeds, and scallions. in a separate bowl, whisk together the orange and lime juices, honey, cumin, oil, salt and pepper. toss w/ the shrimp mixture.
