Ingredients

  • 2cu fresh corn kernels or one 10oz package frozen corn, thawed
  • 1pt cherry tomatoes, quartered
  • 1lb peeled and deveined large, cooked shrimp
  • 1/2cu shelled, roasted pumpkin seeds
  • 6 scallions (white and light green parts), thinly sliced
  • 1/4cu fresh orange juice
  • 2T fresh lime juice
  • 2t agave nectar (or honey)
  • 1t ground cumin
  • 1T olive oil
  • 3/4t sea salt
  • 1/4t black pepper

Method

  • in a large bowl, combine the corn, tomatoes, shrimp, pumpkin seeds, and scallions. in a separate bowl, whisk together the orange and lime juices, honey, cumin, oil, salt and pepper. toss w/ the shrimp mixture.
