Ingredients

  • 1 small box Uncle Ben's long grain rice, cooked
  • 1 lb. bulk sausage, browned
  • 1 medium onion
  • 1 lb. shrimp, cooked and peeled
  • 1 bell pepper
  • 2 celery stalks
  • 1 can cream of mushroom soup
  • 1 small can mushrooms (use fresh, if you want)
  • 1 small can black olives
  • salt to taste
  • pepper to taste
  • oregano to taste
  • garlic to taste

Method

  • Cook rice according to directions on box. Brown sausage. Saute onion, bell pepper and celery.
  • Mix rice, sausage and sauteed vegetables together.
  • Mix in soup and spices together. Use a 13 x 9-inch casserole.
  • Bake at 350° until bubbly.
