Ingredients

  • 1 head (small) Radicchio, Shredded
  • 1 can (15 Oz. Size) Shoestring Beets, Drained
  • 2 whole Shallots, Peeled & Thinly Sliced
  • 1 whole Carrot, Grated
  • 5 ounces, weight Oikos Lemon Yogurt (or Any Citrus Flavored Greek Yogurt)
  • 3 Tablespoons Low-fat Ranch Dressing
  • 1/2 teaspoons Black Pepper, Or To Taste
  • Seasoned Croutons, For Garnish
  • Grated Or Shredded Cheese (optional)

Method

  • In a large mixing bowl, add shredded radicchio, shoestring beets, sliced shallots, and grated carrot. Toss gently to mix. In a small bowl, add yogurt, ranch dressing, and black pepper; stir to combine.
  • Drizzle dressing over salad and toss gently. Garnish with croutons and cheese, if desired. Cover and refrigerate, or serve immediately. Refrigerate any leftovers.
