Ingredients

  • 2 cups plain flour
  • 2 teaspoons baking powder
  • ¼ teaspoon cayenne
  • ½ teaspoon salt
  • 125 g butter
  • 1 cup grated Cheddar cheese
  • 2 egg yolks
  • 1–2 tablespoons lemon juice
  • 1 egg white, lightly beaten
  • sesame seeds

Method

1. Sift flour, baking powder, cayenne and salt into a bowl. Rub in butter with fingertips. Add cheese and mix well.

2. Beat egg yolks with one tablespoon lemon juice. Mix into dry ingredients, adding extra lemon juice if necessary to make a firm dough.

3. Shape dough into a ball, cover with plastic film and chill for one hour. Turn out onto a floured surface and knead lightly.

4. Roll out thinly and cut into small rounds with a fluted cutter.

5. Place on greased baking trays. Allow room for spreading. Brush with egg white and dust with sesame seeds.

6. Bake at 190°C for 10–12 minutes, or until golden. Loosen on the trays and cool for 2–3 minutes. Transfer to a wire rack to cool completely. Store in an airtight container.
