Ingredients

  • 3 tablespoons vegetable oil
  • 1 large white onion, chopped
  • 1 green bell pepper, chopped
  • 2 garlic cloves, minced
  • 3 (15 ounce) cans black beans, rinsed and drained
  • 14 12 ounces stewed tomatoes, undrained and chopped (cajun-style if you can find them)
  • 1 12 cups water
  • 1 tablespoon red wine vinegar
  • 1 teaspoon sugar
  • 1 teaspoon black pepper
  • 12 teaspoon sea salt
  • 8 ounces tomato sauce
  • 6 cups hot cooked yellow rice
  • 12 cup chopped green onion
  • sour cream

Method

  • Place oil in a dutch oven over medium high heat.
  • Saute onion, bell pepper, and garlic about 5 minutes, or until tender.
  • Add thye beans, tomatoes, water, vinegar, suagr, pepper, salt, and tomatoe sauce.
  • Stir to combine.Bring to a boil, cover, reduce heat to low, simmer 1 hour.
  • Uncover and simmer 20 minutes, stirring occasionally.
  • Serve hot over yellow rice and toip each serving with green onions and sour cream.
