Ingredients

  • 1 lb. fresh or frozen shrimp
  • 6 to 8 oz. fresh or frozen crab meat
  • 1/3 c. flour
  • 1/2 c. cooking oil
  • 2 large onions, chopped
  • 1 large green pepper, chopped
  • 6 cloves garlic, minced
  • 2 1/2 c. chicken broth
  • 2 c. okra
  • 3/4 tsp. salt
  • 1/4 tsp. red pepper
  • 1/4 tsp. black pepper
  • 2 bay leaves

Method

  • In large Dutch oven, stir flour and oil until smooth.
  • Cook over medium-high heat, 5 minutes, stir constantly.
  • Lower to medium, stir constantly, 10 minutes, until red-brown roux forms. Add onions, green pepper and garlic.
  • Cook over medium heat for 10 minutes, until vegetables are tender.
  • Stir in chicken broth, okra, salt, red and black pepper and bay leaves.
  • Bring to boil, reduce heat and cover 30 minutes.
  • Add shrimp and crab meat. Simmer 5 minutes.
  • Remove bay leaves.
  • Season to taste.
  • Serve over rice.
