- 1 lb. fresh or frozen shrimp
- 6 to 8 oz. fresh or frozen crab meat
- 1/3 c. flour
- 1/2 c. cooking oil
- 2 large onions, chopped
- 1 large green pepper, chopped
- 6 cloves garlic, minced
- 2 1/2 c. chicken broth
- 2 c. okra
- 3/4 tsp. salt
- 1/4 tsp. red pepper
- 1/4 tsp. black pepper
- 2 bay leaves
Method
- In large Dutch oven, stir flour and oil until smooth.
- Cook over medium-high heat, 5 minutes, stir constantly.
- Lower to medium, stir constantly, 10 minutes, until red-brown roux forms. Add onions, green pepper and garlic.
- Cook over medium heat for 10 minutes, until vegetables are tender.
- Stir in chicken broth, okra, salt, red and black pepper and bay leaves.
- Bring to boil, reduce heat and cover 30 minutes.
- Add shrimp and crab meat. Simmer 5 minutes.
- Remove bay leaves.
- Season to taste.
- Serve over rice.
