Ingredients

  • vegetable cooking spray
  • 1 large Vidalia or Spanish onion, chopped
  • 1 Tbsp. soy sauce, divided
  • Tabasco sauce to taste
  • 2 Tbsp. water
  • 1 lb. scrod fillets

Method

  • Lightly coat large skillet with spray.
  • Over medium-high heat, add onion, 1/2 of soy sauce and dash of pepper sauce.
  • Cover; cook for 2 minutes, stirring occasionally.
  • Add water and fish. Sprinkle with rest of soy sauce and another dash of Tabasco. Cover; simmer until fish flakes easily, about 5 to 10 minutes.
