Ingredients

  • 1 lb. scallops
  • 1/4 c. chopped onion
  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • dash of pepper
  • 1/2 c. milk
  • 3 oz. can mushrooms
  • 2 Tbsp. Parmesan cheese
  • 1 Tbsp. fine parsley flakes
  • 1/2 c. chopped American cheese
  • 1 1/2 c. crushed potato chips
  • 1 c. reserved liquid

Method

  • Parboil scallops 2 minutes; drain, reserving 1 cup of liquid. Put scallops in a greased 2-quart casserole.
  • In pot, melt butter and cook onion until tender.
  • Add flour, then pepper, milk and liquid.
  • Stir until thickens; add mushrooms, Parmesan cheese and parsley flakes.
  • Cover scallops with creamed mixture; top with American cheese, then chips.
  • Cook, covered, for 20 minutes at 350°.
  • Also good made with crabmeat or combination of seafood.
