Ingredients
- 3/4 lb. scallops, washed and cut up
- 4 oz. Cheddar cheese, grated
- 4 oz. onion, chopped
- 1/4 c. chopped celery
- 1/2 c. chopped green pepper
- 4 tsp. margarine, softened
- 1 tsp. flour, dissolved in 1 1/4 c. skim milk
- salt and pepper to taste
- 2 c. cooked rice
Method
- Preheat oven to 400°.
- Saute onion, celery and green pepper in small amount of water in saucepan.
- Heat until very thick, stirring constantly.
- Remove from heat.
- Stir in margarine and scallops.
- Layer casserole dish with rice, scallop mixture and cheese.
- Bake for 15 to 20 minutes.
- Serves 4.
