Ingredients

  • 3/4 lb. scallops, washed and cut up
  • 4 oz. Cheddar cheese, grated
  • 4 oz. onion, chopped
  • 1/4 c. chopped celery
  • 1/2 c. chopped green pepper
  • 4 tsp. margarine, softened
  • 1 tsp. flour, dissolved in 1 1/4 c. skim milk
  • salt and pepper to taste
  • 2 c. cooked rice

Method

  • Preheat oven to 400°.
  • Saute onion, celery and green pepper in small amount of water in saucepan.
  • Heat until very thick, stirring constantly.
  • Remove from heat.
  • Stir in margarine and scallops.
  • Layer casserole dish with rice, scallop mixture and cheese.
  • Bake for 15 to 20 minutes.
  • Serves 4.
