Ingredients
- 2 chicken breasts cubed
- 1 leek thinly sliced
- 1 medium carrot grated
- 1 handful golden raisins
- 1 handful flaked almonds
- bacon diced
- 1/2 lemon
Method
- Heat a little olive oil in a frying pan.
- Add bacon and cook over low heat.
- When bacon starts to brown, add chicken breast cubes.
- Cook until chicken breast is no longer pink.
- Add leek and carrot.
- Season with salt and lemon juice.
- Mix everything and cook well.
- Stir in raisins and almonds.
- Mixture is done when liquids start to evaporate and mixture is dry.
- Serve with white rice, if desired.
