Ingredients

  • 2 chicken breasts cubed
  • 1 leek thinly sliced
  • 1 medium carrot grated
  • 1 handful golden raisins
  • 1 handful flaked almonds
  • bacon diced
  • 1/2 lemon

Method

  • Heat a little olive oil in a frying pan.
  • Add bacon and cook over low heat.
  • When bacon starts to brown, add chicken breast cubes.
  • Cook until chicken breast is no longer pink.
  • Add leek and carrot.
  • Season with salt and lemon juice.
  • Mix everything and cook well.
  • Stir in raisins and almonds.
  • Mixture is done when liquids start to evaporate and mixture is dry.
  • Serve with white rice, if desired.
