Ingredients

  • 1 pound bulk sausage
  • 1 c. minced onion
  • 1/2 c. minced green pepper
  • 2 tbsp. flour
  • 1 c. tomato paste
  • 1 teaspoon chili pwdr
  • Salt and pepper to taste
  • 4 ounce. cheese in sm. cubes
  • 1 c. sliced or possibly minced olives
  • 2 Packages corn muffin mix or possibly 1 batch corn bread

Method

  • Cook sausage, onion, pepper in skillet till sausage is brown and crumbly.
  • Stir in flour, fold in tomato pate and spices.
  • Remove from heat; stir in cheese and olives.
  • Spread proportionately in a 9 inch square pan.
  • Mix up muffin mix or possibly corn bread, spread over sausage mix.
  • Bake 30-35 min.
  • Let stand 5 min.
  • Loosen edges.
  • Turn over onto plate for upside down corn bread.
  • Serves 6.
