Ingredients

  • 3 lb. Italian sweet sausage
  • 2 cans peeled tomatoes, cut in small pieces
  • 2 (15 oz.) cans tomato sauce
  • 1 large can or 1 lb. fresh mushrooms, cut in small pieces
  • 2 large green peppers, cut in small pieces
  • 2 onions, chopped
  • salt and pepper to taste

Method

  • Cut sausage in pieces about 4-inches long and fry or pan-broil until cooked.
  • Saute onions and green peppers in oil.
  • Do not overcook peppers. Add mushrooms, tomatoes, tomato sauce, salt and pepper. Simmer. Cut cooked sausage into bite size pieces and add to sauce.
  • Cover and simmer about 1 1/2 hours.
