Ingredients

  • 4 to 5 lb. sweet Italian sausage (or hot)
  • 4 large green peppers
  • 3 large onions
  • 2 (30 oz.) cans whole tomatoes
  • 1 (30 oz.) can tomato sauce
  • 1 (30 oz.) can crushed tomatoes
  • 1 Tbsp. garlic powder
  • 1 Tbsp. Italian seasoning
  • 1/4 c. Parmesan cheese
  • 1 Tbsp. sugar
  • 1 Tbsp. onion powder

Method

  • Cut sausage in 4-inch lengths and brown completely.
  • Set aside.
  • Empty cans of tomatoes into large kettle or crock-pot. Add all spices and bring to a boil.
  • Turn heat back to simmer. Add sausage and pan drippings.
  • Cut green peppers and onions into large slices and add to sauce.
  • Cover and cook 6 hours.
  • Taste and add additional spice if needed throughout cooking time.
