Ingredients
- 4 hard-cooked eggs
- 1/4 c. margarine, melted
- 1/4 c. flour
- 1 lb. sausage, cooked and drained
- 1 (1 lb.) can corn, drained
- 1/2 tsp. salt
- dash of pepper
- 2 c. milk
- 1 c. soft bread crumbs
Method
- Slice 2 eggs into a 1 1/2-quart dish.
- In saucepan, melt butter; blend in flour, salt and pepper.
- Add milk all at once. Cook, stirring constantly, until mixture thickens and bubbles. Stir in sausage and corn; pour over sliced eggs.
- Slice remaining 2 eggs.
- Arrange eggs over top of sausage mixture.
- Sprinkle with bread crumbs.
- Bake at 375° for 20 to 25 minutes.
