Ingredients

  • 4 hard-cooked eggs
  • 1/4 c. margarine, melted
  • 1/4 c. flour
  • 1 lb. sausage, cooked and drained
  • 1 (1 lb.) can corn, drained
  • 1/2 tsp. salt
  • dash of pepper
  • 2 c. milk
  • 1 c. soft bread crumbs

Method

  • Slice 2 eggs into a 1 1/2-quart dish.
  • In saucepan, melt butter; blend in flour, salt and pepper.
  • Add milk all at once. Cook, stirring constantly, until mixture thickens and bubbles. Stir in sausage and corn; pour over sliced eggs.
  • Slice remaining 2 eggs.
  • Arrange eggs over top of sausage mixture.
  • Sprinkle with bread crumbs.
  • Bake at 375° for 20 to 25 minutes.
