Ingredients
- 1 lb. sausage
- 1 large onion, chopped
- 2 eggs, slightly beaten
- 1 1/2 c. self-rising cornmeal
- 1 (17 oz.) can cream-style corn
- 3/4 c. milk
- 1/4 c. vegetable oil
- 2 c. grated Cheddar cheese
Method
- Preheat oven to 425°.
- Grease a 2-quart baking dish.
- Brown sausage and onion; drain well.
- Combine eggs, cornmeal, corn, milk and oil; mix well.
- Pour half of mixture into prepared baking dish, then sprinkle with sausage and cheese.
- Pour other half of cornmeal mixture over top.
- Bake for 30 to 40 minutes.
