Ingredients

  • 1 lb. sausage
  • 1 large onion, chopped
  • 2 eggs, slightly beaten
  • 1 1/2 c. self-rising cornmeal
  • 1 (17 oz.) can cream-style corn
  • 3/4 c. milk
  • 1/4 c. vegetable oil
  • 2 c. grated Cheddar cheese

Method

  • Preheat oven to 425°.
  • Grease a 2-quart baking dish.
  • Brown sausage and onion; drain well.
  • Combine eggs, cornmeal, corn, milk and oil; mix well.
  • Pour half of mixture into prepared baking dish, then sprinkle with sausage and cheese.
  • Pour other half of cornmeal mixture over top.
  • Bake for 30 to 40 minutes.
