Ingredients

  • 2 lbs sausage (sweet or hot)
  • 2 green peppers (cleaned and slices in thin strips)
  • 2 red peppers (cleaned and sliced in thin strips)
  • 1 cup white wine
  • 1 (6 ounce) can tomato paste
  • 1 tablespoon olive oil
  • 1 tablespoon salt

Method

  • Add olive oil and sausage in a large frying pan medium to high heat.
  • Brown sausage on all sides.
  • Slice sausage in 1in.
  • pieces(make sure sausage is pretty well browned or it will fall apart when cutting).
  • Add white wine, tomato paste and salt mix until well blended.
  • Cover and let simmer for 5 minutes.
  • Add peppers cover again let simmer another 10 minutes.
  • Serve on a roll or white rice.
