Ingredients

  • 1 qt. drained sauerkraut
  • 1 c. apples (more if desired), not peeled
  • 2 c. diced celery
  • 1 large green pepper
  • 1 large red pepper or 1 large jar pimentos, drained
  • 2 c. sugar (less if desired, at least 1 1/2 c.)
  • 1/2 c. red wine vinegar

Method

  • Add sugar and vinegar together to dissolve.
  • Add apples and sauerkraut.
  • Add remaining ingredients.
  • Cover and chill at least 4 hours before serving.
  • Overnight is best.
  • Stir a few times. Flavor improves on standing.
  • Keep refrigerated.
  • Makes 2 quarts.
