Ingredients
- 1 qt. drained sauerkraut
- 1 c. apples (more if desired), not peeled
- 2 c. diced celery
- 1 large green pepper
- 1 large red pepper or 1 large jar pimentos, drained
- 2 c. sugar (less if desired, at least 1 1/2 c.)
- 1/2 c. red wine vinegar
Method
- Add sugar and vinegar together to dissolve.
- Add apples and sauerkraut.
- Add remaining ingredients.
- Cover and chill at least 4 hours before serving.
- Overnight is best.
- Stir a few times. Flavor improves on standing.
- Keep refrigerated.
- Makes 2 quarts.
