Ingredients

  • 2 slices of your favorite bread
  • 1 can Bela sardines (or any you prefer)
  • 3 tablespoons chopped cilantro, parsley, or arugula
  • 1 handful chopped scallions
  • 1 tablespoon mayonnaise
  • lime or lemon juice
  • salt and pepper

Method

  • Lightly toast your bread and spread the mayo on one slice.
  • Scatter the scallions over the mayo, then lay as many of the sardines as you like over one slice of bread. Press the sardines with a fork to break them up a bit and cover the bread.
  • Layer the chopped greens over the sardines--use up as much of the greens as you prefer.
  • Over the greens, squeeze lime or lemon juice--a good amount is wise, to counter the richness of the mayo and sardines. Salt and pepper generously and top with second slice of bread.
