Ingredients

  • 1 medium (1 cup) fresh mango, peeled, coarsely chopped
  • 3/4 cup buttermilk*
  • 1/4 teaspoon salt
  • 2 tablespoons chopped fresh cilantro leaves
  • 3 tablespoons Land O Lakes Butter
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon garlic salt
  • 1/8 teaspoon ground red pepper (cayenne)
  • 4 (4-ounce) salmon filets, skin removed
  • Hot cooked rice, if desired

Method

  • Combine all sauce ingredients except cilantro in food processor bowl fitted with metal blade.
  • Pulse until pureed and smooth.
  • Stir in chopped cilantro.
  • Set aside.
  • Melt butter in 12-inch nonstick skillet over medium heat until sizzling.
  • Stir in spices.
  • Add salmon; cook 5-6 minutes or until lightly browned.
  • Turn salmon; continue cooking 5-6 minutes or until salmon flakes easily with fork.
  • Serve with mango sauce and rice, if desired.
