- 1 cup COOL WHIP FREE Whipped Topping
- 2 fresh peaches, sliced
- 1-1/2 cups fresh or frozen blueberries
- 1/4 cup dried cranberries
- 1 medium banana, sliced
- 12 oz. salmon fillet or steak
- 1 Tbsp. extra virgin olive oil
- 2 cups instant white rice, uncooked
- 3 cups snow pea pods
- 2 cups sliced frozen carrots
- 2 Tbsp. trans fat free canola-based soft margarine
- 32 fl oz (4 cups) drinking water
Method
- Spread COOL WHIP FREE evenly onto bottoms and up sides of 4 bowls.
- Refrigerate until ready to serve dessert, then spoon fruit evenly into centers of COOL WHIP FREE.
- Place salmon on broiler pan sprayed with cooking spray; rub olive oil into salmon and season as desired with favorite salt-free seasoning.
- Broil 3-4 min.
- per side, or until cooked through.
- Cook rice as directed on package.
- Steam pea pods and carrots; toss with margarine; serve with cooked salmon and rice.
- Divide into 4 equal servings.
- Serve each person an 8 fl oz a glass of water with meal.
