Ingredients

  • 1 cup COOL WHIP FREE Whipped Topping
  • 2 fresh peaches, sliced
  • 1-1/2 cups fresh or frozen blueberries
  • 1/4 cup dried cranberries
  • 1 medium banana, sliced
  • 12 oz. salmon fillet or steak
  • 1 Tbsp. extra virgin olive oil
  • 2 cups instant white rice, uncooked
  • 3 cups snow pea pods
  • 2 cups sliced frozen carrots
  • 2 Tbsp. trans fat free canola-based soft margarine
  • 32 fl oz (4 cups) drinking water

Method

  • Spread COOL WHIP FREE evenly onto bottoms and up sides of 4 bowls.
  • Refrigerate until ready to serve dessert, then spoon fruit evenly into centers of COOL WHIP FREE.
  • Place salmon on broiler pan sprayed with cooking spray; rub olive oil into salmon and season as desired with favorite salt-free seasoning.
  • Broil 3-4 min.
  • per side, or until cooked through.
  • Cook rice as directed on package.
  • Steam pea pods and carrots; toss with margarine; serve with cooked salmon and rice.
  • Divide into 4 equal servings.
  • Serve each person an 8 fl oz a glass of water with meal.
