- 1 lb. can salmon
- 1 can evaporated milk
- 1 medium onion, chopped
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- few sprigs finely minced parsley
- 1 c. soft bread crumbs
- 3 eggs, well beaten
- 1 tsp. lemon juice
- 1 tsp. Worcestershire sauce
- 2 Tbsp. melted butter
- 1/4 tsp. cayenne pepper
Method
- Drain salmon; remove skin and bones and flake into a bowl. Add remaining ingredients. Shape into a loaf and place in a well-buttered pan. Bake at 350° for 1 hour or until the top is a delicate golden brown and loaf is firm, but still moist and tender. Serve as is or with sauce.
