Ingredients

  • 1 lb. can salmon
  • 1 can evaporated milk
  • 1 medium onion, chopped
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • few sprigs finely minced parsley
  • 1 c. soft bread crumbs
  • 3 eggs, well beaten
  • 1 tsp. lemon juice
  • 1 tsp. Worcestershire sauce
  • 2 Tbsp. melted butter
  • 1/4 tsp. cayenne pepper

Method

  • Drain salmon; remove skin and bones and flake into a bowl. Add remaining ingredients. Shape into a loaf and place in a well-buttered pan. Bake at 350° for 1 hour or until the top is a delicate golden brown and loaf is firm, but still moist and tender. Serve as is or with sauce.
