Ingredients

  • 1/2 lb. fresh salmon fillet, skin removed
  • white pepper to taste
  • nonstick vegetable or olive oil spray
  • 1 1/4 c. grated Parmesan cheese
  • 4 large eggs
  • 1/4 c. minced fresh chives
  • white pepper to taste
  • seasoned salt (such as Lawry's)
  • 1 Tbsp. butter or margarine, cut into 4 pieces
  • 3/4 c. Italian style breadcrumbs
  • 3 Tbsp. melted butter or margarine
  • 1/2 c. minced fresh dill
  • 2 tsp. minced lemon peel (zest; colored part only)
  • 1 c. light sour cream
  • bagel chips, crackers or thin slices French bread
  • 3 bunches fresh herbs, such as dill, basil and thyme (optional garnish)

Method

  • Position oven rack 7-inches from broiler element.
  • Preheat broiler.
  • Line a jelly roll pan or small baking pan with aluminum foil.
  • Place salmon on prepared pan.
  • Season with seasoned salt and white pepper.
  • Place 1 tablespoon of butter or margarine, cut into pieces, on top.
