Ingredients

  • 1 medium onion, sliced thin
  • 3 cloves garlic, minced
  • 1/4 c. virgin olive oil
  • 1/8 lb. Prosciutto, chopped up
  • 1/2 stick butter
  • 1/4 c. chopped, roasted red pepper
  • 1/4 c. chopped, sun-dried tomatoes
  • 1/2 to 1 tsp. hot pepper flakes
  • 1 pt. heavy cream
  • 1/3 c. grated Locatelli cheese
  • 1/3 c. vodka
  • 1 jar marinated artichoke hearts, quartered
  • prepared tomato sauce
  • 1 Tbsp. basil
  • 1 lb. bow tie pasta

Method

  • Saute onion and garlic in olive oil.
  • (Add while oil is still cool.)
  • Add Prosciutto; saute about 10 minutes, until onion is translucent.
  • Add butter, chopped pepper, sun-dried tomatoes, hot pepper flakes and basil; simmer 10 minutes.
  • Add heavy cream, grated cheese, vodka, artichoke hearts and just enough prepared sauce until sauce is pink color.
  • Serve over bow tie pasta.
