Ingredients

  • 1 red cabbage
  • 3 bay leaves
  • 7 cloves
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup apple cider vinegar
  • 3 apples, pealed, cored and quartered
  • pinch alspice
  • 1 1/2 - 2 cups raisins( current berries also good)
  • 1/2 lb bacon, cut in 1/2 in strips
  • 6 medium onions

Method

  • Bring grated cabbage plus other ingredients up to bacon to boil in water (2 inches in bottom of pan). Let simmer on low for 45 minutes to 1 hour (when crispness is gone).Meanwhile fry bacon and add some more oil after it is done. Slice onions and fry together with bacon until dark gold(keep stirring on high). When cabbage is done, add bacon, onions and grease. Taste for more vinegar or salt. If too sour, add brown sugar (1/2 tsp)
