Ingredients
- 3 slices cured ham
- 1 1/2 qt. water
- 2 c. finely chopped celery
- 2 c. finely chopped onion
- 3 qt. finely sliced, fresh potatoes
- 1 clove fresh garlic, minced
- 2 tsp. salt
- 1 tsp. pepper
- 2 tsp. parsley flakes
- 6 Tbsp. cornstarch
- 1 c. whipping cream
Method
- Boil ham, celery, onion, salt and pepper until ham is tender. Remove ham; dice in small cubes.
- Add enough water to ham broth to equal 3 quarts.
- Return to burner.
- Add potatoes, garlic and parsley flakes.
- Boil until potatoes are tender.
- Mash potatoes with wire whisk until they are coarsely mashed.
- Mix cornstarch and cream; add to potato mixture.
- Bring to a boil and serve hot.
