Ingredients

  • 3 slices cured ham
  • 1 1/2 qt. water
  • 2 c. finely chopped celery
  • 2 c. finely chopped onion
  • 3 qt. finely sliced, fresh potatoes
  • 1 clove fresh garlic, minced
  • 2 tsp. salt
  • 1 tsp. pepper
  • 2 tsp. parsley flakes
  • 6 Tbsp. cornstarch
  • 1 c. whipping cream

Method

  • Boil ham, celery, onion, salt and pepper until ham is tender. Remove ham; dice in small cubes.
  • Add enough water to ham broth to equal 3 quarts.
  • Return to burner.
  • Add potatoes, garlic and parsley flakes.
  • Boil until potatoes are tender.
  • Mash potatoes with wire whisk until they are coarsely mashed.
  • Mix cornstarch and cream; add to potato mixture.
  • Bring to a boil and serve hot.
