- 4 whole Bone-in Pork Chops
- 1 Tablespoon Extra Virgin Olive Oil
- 1 teaspoon Kosher Salt
- 1 teaspoon Herbes De Provence
- 1/2 teaspoons Black Pepper
- 1 whole Diced Onion
- 2 whole Large Tart Apples
- 1 Tablespoon Extra Virgin Olive Oil
- 2 cloves Minced Garlic
- 1/4 teaspoons Kosher Salt
- 18 teaspoons Black Pepper
- 1 teaspoon Herbes De Provence
- 1 Tablespoon Butter
- 1 Tablespoon All-purpose Flour
- 1-13 cup Low Sodium Chicken Stock
- 2 teaspoons Brown Sugar
- 1/2 Tablespoons Worcestershire Sauce
Method
- 1.
- Preheat oven to 350 degrees F. 2.
- Brush pork chops on both sides with extra virgin olive oil.
- Rub with seasonings and roast in a shallow pan on a rack for one hour at 350 degrees F. 3.
- Saute the onions and apples in large a heavy bottomed frying pan on medium high heat with the oil, until the onions begin to caramelize and turn golden.

- Add garlic and continue to saute another 1-2 minutes, just until the garlic begin to soften and turns fragrant.
- 5.
- Stir in salt, pepper, herbes de provence, and butter.
- 6.
- Once butter has melted, sprinkle the all-purpose flour over everything and stir well to incorporate.
- 7.
- Add the chicken stock, brown sugar, and Worcestershire sauce.
- 8.
- Let simmer on low while pork chops roast.
- 9.
- Gently mash half the apples to incorporate into the sauce.
- 10.
- Serve over the roasted pork chops.
