Ingredients

  • 4 whole Bone-in Pork Chops
  • 1 Tablespoon Extra Virgin Olive Oil
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Herbes De Provence
  • 1/2 teaspoons Black Pepper
  • 1 whole Diced Onion
  • 2 whole Large Tart Apples
  • 1 Tablespoon Extra Virgin Olive Oil
  • 2 cloves Minced Garlic
  • 1/4 teaspoons Kosher Salt
  • 18 teaspoons Black Pepper
  • 1 teaspoon Herbes De Provence
  • 1 Tablespoon Butter
  • 1 Tablespoon All-purpose Flour
  • 1-13 cup Low Sodium Chicken Stock
  • 2 teaspoons Brown Sugar
  • 1/2 Tablespoons Worcestershire Sauce

Method

  • 1.
  • Preheat oven to 350 degrees F. 2.
  • Brush pork chops on both sides with extra virgin olive oil.
  • Rub with seasonings and roast in a shallow pan on a rack for one hour at 350 degrees F. 3.
  • Saute the onions and apples in large a heavy bottomed frying pan on medium high heat with the oil, until the onions begin to caramelize and turn golden.

  • Add garlic and continue to saute another 1-2 minutes, just until the garlic begin to soften and turns fragrant.

  • Stir in salt, pepper, herbes de provence, and butter.
  • 6.
  • Once butter has melted, sprinkle the all-purpose flour over everything and stir well to incorporate.
  • 7.
  • Add the chicken stock, brown sugar, and Worcestershire sauce.
  • 8.
  • Let simmer on low while pork chops roast.
  • 9.
  • Gently mash half the apples to incorporate into the sauce.
  • 10.
  • Serve over the roasted pork chops.
