Ingredients

  • 3 whole Acorn Squash
  • 2 Tablespoons Olive Oil
  • 1 dash Salt
  • 1 dash Pepper
  • 1/2 whole Yellow Onion, Chopped
  • 2 Tablespoons Light Brown Sugar
  • 1 Tablespoon Milk

Method

  • Preheat oven to 400°F. Cut each acorn squash in half and discard seeds. Brush the inside of each half with olive oil. Sprinkle with salt and pepper. Sprinkle the onions inside each acorn half until all onions are used. Bake for 45 minutes, until edges of squash begin to turn brown. Remove peel from each half and place acorn squash with onions in a large mixing bowl. Add brown sugar, milk, a dash of salt, and a dash of pepper and blend until smooth. Serve warm.
