Ingredients

  • 1 tablespoon Garlic, minced
  • 1 tablespoon Shallots, minced
  • 2 tablespoons Unsalted Butter
  • 2 pounds Brussels Sprouts, cleaned and blanched
  • 10 ounces Proscuitto, cut into lardons
  • 1 cup Parsley Leaves, chopped
  • 1 cup Honey
  • 1 tablespoon Sugar

Method

  • Heat butter in large saute pan and saute garlic and shallots until butter begins to foam.
  • Add the brussels sprouts and toss well to combine everything.
  • Cook for 2 to 3 minutes, then add honey, sugar and proscuitto.
  • Turn up the flame to medium-high and cook, not moving the pan, to allow brussels sprouts to caramelize and Proscuitto to crisp.
  • Finish with salt, pepper and parsley.
