Ingredients

  • 1 cos lettuce
  • 2 handfuls of spicy rocket leaves
  • 1 Spanish onion
  • 2 ripe tomatoes
  • 1 red capsicum
  • 2 mangos
  • 1 cup of dry-roasted macadamia nuts
  • 4 tbsp of macadamia oil
  • 2 fresh limes
  • salt and pepper

Method

This recipe was sent in by David Lee of the Nambucca Shire, on the NSW North Coast, where macadamia trees are plentiful.

Wash and dry the tender leaves from a head of cos lettuce and chop into bite-sized pieces. Place in a bowl with 2 handfuls of spicy rocket leaves. Add a finely diced Spanish onion, 2 ripe tomatoes cut into wedges and a red capsicum cut into sticks 1cm thick and 6cm long. Peel 2 mangos and cut off the cheeks. Thinly slice them and add to the salad along with a cup of dry-roasted macadamia nuts cut into small chips.

Just before serving, dress with 4 tablespoons of macadamia oil, the juice of 2 fresh limes and season with salt and pepper and toss well.
